I have a PhD in Chemical Sciences from the University of Córdoba and I have more than 20 years of experience in vinegar research and development. My thesis covered the biochemical mechanisms involved in its production. I have also actively participated in projects with agri-food companies and laboratories and published scientific articles in specialized journals. I have also given presentations on the preparation, properties, applications and benefits of vinegar.
