After working in different companies in the sector in Spain and France, now, for 25 years, I have been dedicated to the professional training of new generations of cooks from Galiza in the public sector. In my classes I try to instill the values of the circular economy, working with seasonal products and valuing the primary sector of Galiza in all areas. I also promote challenge-based learning and anti-waste in all training activities.
