With Carlos Pardo she founded Vallelongo, an artisan company with 3 lines: cheeses, black garlic and paprika from Bierzo. Among the cheeses that stand out are: Cheese with Alicante nougat (the only one with the PGI Turrón Alicante y Jijona), Blue Cheese with black garlic (1st Prize Inovaçao Feira de Queijo Alentejo 2025), and Cheese with Pear. In 2025, a new Cheese Ripening Center will be opened in Mina; first in Castilla y León, and a pioneer in Spain for blue cheese and goat cheese roll.
